SPINACH SALAD WITH PERFECT DRESSING
My salad loving seasons are pretty seasonal, but I’m trying to eat more vegetables while staying healthy with slimmer waistline. There are few salad recipes I love because eating vegetables isn’t really that fun except when I’m drinking my green smoothies. I have tried eating a salad daily but was less committed to it. I’m trying to make eating one salad a day a habit because of the health benefits. Hopefully, I’ll come up with sweet and savoury salad recipes instead of bland vegetables.
Ingredients
SALAD
- 2 cups spinach roughly chopped
- 1 cup Cabbage finely chopped
- 1 cup cucumber chopped
- 10 cherry tomatoes chopped
- 2 tablespoon pumpkin seeds toasted or raw
- 200 g mackerel fillet cooked
DRESSING
- 2 tablespoons lemon juice
- 1 tablespoon tahini paste
- 1 tablespoon stevia powder
- 1/2 teaspoon black pepper
- 1 tablespoon olive oil
Servings: people
Instructions
SALAD
- Chop vegetables for salad and toss in a bowl
- Add pumpkin seeds, toss salad and set aside
SALAD DRESSING
- Add everything and stir until smooth. Chill or use immediately
