SPROUTED BEANS STIR FRY

Ingredients
- 1 tbsp olive oil
- 400 g mushroom
- 2 cloves garlic minced
- 1 inch ginger minced
- 1/2 small onions diced
- 1/2 green bell pepper strips
- 1/2 red bell pepper strips
- 1/2 cup Broccoli chopped
- 1/2 cup green beans strips
- 1 1/2 cup sprouted beans
- 1 tbsp soy sauce
- 1 tbsp vegetarian oyster sauce
- 1 tbsp sweet chili sauce
- 1/2 tbsp sesame oil
- 1 tbsp rice vinegar
- 1 large carrot strips
- 1 large spring onion strips
- hot pepper for taste
- 1 cube vegetarian stock cube

Instructions
- Heat oil in a large pan or wok over medium-high heat until hot. Add the mushroom, and cook until brown, stirring occasionally, about 5 minutes.
- In the same pan, add the garlic, ginger and onions, stirring constantly, and cook until very soft, about 30 seconds. Add the bell peppers, broccoli, green beans, and cook for 2 minutes, until they soften but still crispy.
- Stir in the bean sprouts, and cook about 2 minutes until heated through. Add the soy sauce, oyster sauce, sweet chilli sauce, sesame oil and rice vinegar, and stir until mix well. Cook for a minute then add carrot, spring onions, hot pepper and stock cube
- Cook for another 2 minutes, you may adjust the seasonings if desired. Remove from the heat. Serve with rice or just enjoy it Serve warm.
Recipe Notes
You can replace mushroom with chicken, tofu, beef or fish. You can replace rice vinegar with any apple cider vinegar, Broccoli can be optional.
