Soups containing meat often have excess fat, especially those fatty meaty cuts. Ever thought of the fat content in your bowl of chicken or meat pepper soup? Thinking you’re eating healthy not knowing you are consuming hidden fat. Below are guides on removing excess fat from stocks.
Tip 1: Refrigerator until the fat rises to the top and solidifies. You can then gently lift this layer off with a knife, spoon or spatula before you add other vegetables or re-heat it for serving.
Tip 2: If you don’t have time to refrigerate, drop a few ice cubes into the broth and most of the fat will stick to them. Just lift the cubes out before they start to melt too much.
