RECIPE: CABBAGE FUFU
On our last post, we discussed the benefits of cabbage. Cabbage is in right ow because of the trend and craze of low carb diet. Aside vegetable salad, how else do you use cabbage. There are tons of recipes for cabbage, such as cabbage rice, slaw, cabbage soup, cabbage wrap and cabbage swallow which is the most popular among low carb diet community.
so how so you make cabbage swallow or fufu?
You will need (for 2 people)
- 1/2 head of cabbage
- 2 tablespoon psyllium husk
- water
Procedure
- Cut and wash cabbage
- Blend until its very smooth (like a puree) and strain out the water
- Pour blended cabbage in a pot under medium heat and cook for a least 3 minutes while stirring (turning)
- While the cabbage is heating up, add psyllium husk and keep stirring with wooden spoon (like you’re turning (stirring) fufu.
- Once its all come together like fufu, mould like swallow and serve with your favorite soup
Calories per serving: 55 calories/ 0g of fat / 12g of carbohydrate / 3g of protein / 5g of fiber / 7g net carb
If you cannot access or afford psyllium husk then try this out, just replace the husk with a handful of garri, plantain flour, wheat or oatmeal meal. This of course is not keto complaint but you’re also eating less carbohydrate
