Here's healthier fresh pear cake, you can swap pear for apple or any fresh fruit.

Ingredients
- 1 cup Fresh pear peeled, cored and chopped
- 2 tbsp Brown sugar
- 1/2 cup 1 Quinoa flour
- 1/2 cup Wheat flour
- 1/2 tsp salt
- 1/2 tsp baking soda
- 1/2 tsp ground nut meg
- 1/2 tsp cinnamon
- 2 egg whites
- 1/4 cup canola oil
- 1/2 cup skimmed milk or water

Instructions
- Preheat oven to 325 degrees F (165 degrees C).
- Combine the pears, sugar and milk. let stand for one hour.
- Slightly beat the egg whites and combine them with the oil and pear mixture.
- Stir the flour, salt, baking soda, nutmeg, cinnamon. Stir in the pear mixture.
- Spray pan with non-stick cooking spray. Pour batter into the prepared pan.
- Bake at 325 degrees F (165 degrees C) for 45 minutes. Remove from oven and let cool on a wire rack for 10 minutes before removing form pan.
