Healthy Baked Scotch Egg

Ingredients
- 150g raw sausage chicken, turkey or beef
- 4 hard boiled egg
- 5 tbsp Ground Flaxseed
- 1 egg beaten

Instructions
- Preheated oven on 190 C
- Season meat with thyme, onions, nut meg, pepper
- Divide mince meat into 4 equal portions.
- On a lightly sprinkle flaxseed on egg or roll eggs in flaxseed, pat out each portion of meat to about (1/8 in) thickness.
- Wrap portions completely around each of the hard boiled eggs, pressing edges together to seal.
- Dip mince-coated eggs in beaten egg, then roll in flaxseed
- Place on baking tray and bake until lightly browned, about 20 to 25 minutes.
Recipe Notes
Tip: don't over cover the egg with too much meat so it can cook well while baking
