HEALTHY VEGETABLE SAUCE
Ingredients
- 1 kg spinach
- 8 chicken drumsticks
- 3 hot red chili
- 1 cup onions chopped
- 2 2k red bell pepper
- 2 clove ginger minced
- 2 clove garlic minced
- 2 Stock cube
- 1 tbsp olive oil

Instructions
- Cut, blend and cook down the red bell pepper until the liquids are dried up and it more like a paste ( do the same if you are using tomatoes) and set aside.
- In another pan/pot, add the chicken (raw), add chili, ginger, garlic, stock cube, onions, thyme and little water, allow to simmer over a low heat for 15 mins watching it so it won't burn(don't add water at the point, the idea is for the spices to work on the chicken).
- After simmering for 15 mins, then add 1 cup of water and cook over a medium heat until chicken is properly done with little or no stock left. Bring the chicken down, remove bones and shred setting it aside.
- To the spinach, put in a pot/pan (DO NOT ADD ANY LIQUID) and cook it down for 2 mins then set aside.
- Put the pot/pan containing the red pepper/tomato paste over a medium heat and add olive oil, allow to cook for 5 mins then add the shredded chicken, stir and simmer for more 7 mins.
- Add spinach to the simmering paste and chicken.
- Stir it properly and taste for salt. allow to simmer for 1 min and bring it down. Ready to serve
- Serve with baked sweet potatoes
