Moi moi Oka (corn) or Ukpo Oka or Corn Pudding

This food reminds me of my childhood; my mum will make it while telling us stories. Then it wasn’t that special to me but recently it has been in my head and I can’t get it off. So I kept asking my mum to buy fresh corn so I can satisfy my taste bud …lol. Well thank God she bought some and I decided to put my memory to test, after making it, it came out perfect.

Instructions
  1. Remove corn seeds from the strands, wash and blend with water until the paste is coarse (rough) in texture not very smooth.
  2. Pour the paste into a big bowl Then in the blender, blend together fresh pepper, onions, crayfish until it is very smooth, and then add this mixture to the coarse corn paste.
  3. If the mixture is thick, do add more water. Add salt, seasoning (cube), black pepper, prawn/ big crayfish or dry fish, palm oil and stir until it is properly mixed then add scent leaf or spring oil and stir well.
  4. Pour in a plastic bag (like the normal moi moi nylon) or in the leaf used in wrapping moi moi. If you are using nylon like I did, make sure to double it just to be on a safe side (you don’t want the paste all over your pot).
  5. Steam in a pot just like moi moi for like 1 hour, cook until it is solid
  6. Allow to cool down before eating, this meal is delicious, filling and healthy (once you don’t pack too much oil in it, and if eaten in moderation.
