Heat oil in a large pan or wok over medium-high heat until hot.
Add the mushroom, and cook until brown, stirring occasionally, about 5 minutes.
In the same pan, add the garlic, ginger and onions, stirring constantly, and cook until very soft, about 30 seconds.
Add the bell peppers, broccoli, green beans, and cook for 2 minutes, until they soften but still crispy.
Stir in the bean sprouts, and cook about 2 minutes until heated through.
Add the soy sauce, oyster sauce, sweet chilli sauce, sesame oil and rice vinegar, and stir until mix well. Cook for a minute then add carrot, spring onions, hot pepper and stock cube
Cook for another 2 minutes, you may adjust the seasonings if desired. Remove from the heat.
Serve with rice or just enjoy it
You can replace mushroom with chicken, tofu, beef or fish. You can replace rice vinegar with any apple cider vinegar, Broccoli can be optional.
