  1. Preheat to 425 degrees F. Place a rack in the centre of the oven and Grease a baking sheet (cooking spray).
  2. In a small bowl, whisk together the mashed sweet potato, honey and 1/2 of water and set aside.
  3. In a large bowl, whisk together the flour, baking powder and salt. Rub in oil with your hands, until the mixture resembles coarse meal.
  4. Add the sweet potato mixture and fold gently to combine. The amount of extra water that might be needed will depend on the moisture of the sweet potato.
  5. Turn the dough out onto the surface and knead lightly 2 to 3 times with the palm of your hand until the mixture comes together.
  6. Gently roll the dough to 2 1/2 inch thick and cut with knife or cutter.
  7. Place the biscuits on the prepared baking sheet and bake until light golden brown and firm to the touch, 14 to 15 minutes.
